Sous Executive Chef at Fairmont El San Juan Hotel

Chef Luis Cosme Leon was raised in Cidra, Puerto Rico. He studied Culinary Arts at Ana G. Mendez University in Carolina. In 2004, he began supervised practices in preparation for a culinary competition at University of Puerto Rico in Carolina, where he won first place. He continued with training for the final competition in San Diego, California, also securing first place. Luis has worked at Jajome Terrace and Saboreo restaurant. From 2010 to 2013, he was the Sous Executive Chef at El Saboreo restaurant in Juncos and then worked at La Concha Resort at the Voga Italian Grill restaurant. In 2016, he became the Executive Chef at Villa Montaña Beach Resort and in 2020, he opened El Cielo Wine and Beers restaurant in Caguas. In 2022, he became the Sous Executive Chef under Chef Erika Gomez's leadership.
